A week ago Sunday, (or was it Saturday?) we made my Aunt Linda’s Chicken Taco recipe. it’s super simple, and oh-so-yummy!

I happened to mention on Facebook that we were anticipating these tacos for dinner, and received plenty of requests for the recipe. Further to Aunt Linda’s approval, here it be:

Aunt Linda’s Crock Pot Chicken Burrito Recipe
originally given to me on November 19, 2010 (and well-loved, ever since)

2 cans of ROTEL brand Diced tomatoes and Green Chilies
1 pkg of Taco Seasoning
4 boneless, skinless chicken breasts

Pour 1 can of ROTEL into the crock pot.
Add chicken breasts (yes, raw).
Sprinkle the Taco seasoning over the chicken breasts.
Add 2nd can of ROTEL.
Turn it on High.

If you are there you can stir it once in a while, if not, at the end of the day the chicken should be pretty much to the point that you can stir it and it is shredded (this is a magical experience).

From there, i like to use the “juice” (b/c it makes quite a bit of juice) as my water to make some rice.

Aunt Linda suggested that you may also add a small can of Corn (kernels drained) and a small can of black beans, washed and drained, to the rice.

From there, make your tacos, friends!
Flour tortilla, rice and corn and bean mixture, Chicken, guacamole, sour cream, shredded sharp cheddar…however you like it. yummo !!
